Steamed Breast of Chicken with Mustard Sauce

Pressure Time: 7 min

Servings: 4

 

INGREDIENTS:

- 1 1/2 lb. chicken breast

- 1 lb. chicken wings

- 1/2 onion

- 1 carrot

- 1/2 celery stalk

- 1/3 cup fresh cream

- 3 tbsp. butter

- 1 tbsp. mustard (Dijon)

- 1/2 glass wine (white)

- Extra virgin olive oil

 

DIRECTIONS:

A) Clean the breast of chicken and take off the skin.

B) Cut the vegetables into bite size portions and brown in small amount of olive oil in the pressure cooker. Put in the chicken wings and brown. Sprinkle with white wine.

C) Simmer for 20 minutes after adding cold water. Put in fresh cream and simmer for 10 minutes. With a fine strainer, strain sauce and add mustard and butter, whisking while still hot. Put sauce aside.

D) For 7 minutes, cook the breast of chicken in the steamer inside the pressure cooker, turning down the heat and the timing when the first ring on the indicator rod comes up. The pressure should be released by using the handle slide or just pouring cold water on the lid.

E) All there is to do now is slice the breast of chicken, add the mustard sauce to taste and enjoy a wonderfully delicious dinner.
